10月28日晚,“2021宝珀理想国文学奖”颁奖晚宴于宝珀国贸商城旗舰店起航,这是瑞士高级制表品牌宝珀BLANCPAIN与中国最具影响力的出版品牌理想国分离发起的奖项,以挖掘文坛新人,创建公正、专业、耐久与具备国际对话才干的文学奖项为目的创建的奖项。

On 28 October, an awards dinner for the 2021 Blancpain-Imaginist Literary Prize was held at Blancpain’s flagship store at China World Mall. The award was jointly created by Swiss luxury watch brand Blancpain and influential Chinese publisher Imaginist to discover new faces in the literary world and create an international literary dialogue.

Opera BOMBANA行政主厨Andrea Susto联手米其林一星北京厨房行政主厨古志辉,带来二人首度四手联弹晚宴,将意大利风情与顶级粤菜中止分离演绎,带来理想之中,预料之外的融合佳宴。


Opera BOMBANA executive chef Andrea Susto teamed up with executive chef of one Michelin-starred The Beijing Kitchen, Chef Ku, to create a gala dinner menu fusing Italian and Cantonese cuisine.

Beef tartare | mushroom tartare | arancini | mixed geoduck with red cherry shrimp salad | barbecue pork with caviar


翻开古色古香的中式食盒,映入视线的前菜集锦由两位主厨分离呈现,这是本次宴会的第一处小惊喜。鲜嫩的生食牛肉搭配鱼子酱,典型的意大利式“山海之情”;蘑菇挞挞是应季而生的鲜美,酥脆与滑嫩一同在口中绽放;意式炸饭团则是意大利西西里的经典小吃,一口下肚充溢满足感。


The menu began with a selection of appetisers created by both chefs. Chef Andrea’s beef tartare with a scoop of caviar was a classic Italian surf and turf combination, while the crispy arancini were a taste of Sicily in one bite.

众多钟表品牌中,宝珀关于海洋有着极端深沉的情感,二十世纪五十年代问世的“五十噚”腕表便是宝珀的标记性代表,本次晚宴中,行政主厨Andrea Susto以这道香烤鳌虾致敬海洋,致敬宝珀。新颖鳌虾整只剥出,以快速炙烤锁住水分和鲜美;头尾部分并没有被丢弃,而是将虾壳熬煮成鳌虾浓汤,幻化成细腻泡沫,其中包含了更多的鲜美滋味,浓郁的海洋风情扑面而来。


Blancpain has a deep affinity with the ocean, as represented by the iconic Fifty Fathoms collection. Chef Andrea also drew inspiration from the ocean for this starter, selecting premium scampi served both simply grilled and as a complex bisque-like foam.

极尽鲜美之后,清新的意式饺子带来一片静宁天地。以多种菌菇吊出的清汤中带着纯自然的鲜美,意式饺子固然外形看似熟习,口感愈增强韧劲道,即熟习又陌生,别有洞天。


This refreshingly light consommé distilled from natural wild mushrooms cleansed the palate ahead of the main courses, while the ravioli were rich and flavourful.

细嫩的澳洲M9牛小排带着草原的幽香,长时间的迟缓炖煮早已将滋味注入柔嫩的纤维中,每一口都透着细腻漂亮;牛里脊则披着撩人的烟火气息,与黑蒜汁的搭配爆发出巧妙的火花。


This dish contrasted tender, slow-cooked short ribs with smoky grilled beef tenderloin, both cuts sourced from premium Australian wagyu cows. Black garlic added a complex hit of umami.

一道道起承转合的菜品过后,甜品轻抚着人们的味蕾。秋天的甜有大半是栗子所赋予的,浓郁的栗子慕斯如峰峦叠嶂,白色的香缇丽奶油像躲藏在山峰间的白雪,再搭配甘美入魂的杨枝甘露,美好得如一幅甘美梦境。


Chef Andrea’s dessert celebrated the sweetness of autumn chestnuts in his own unique interpretation of a classic mont blanc dessert, while Chef Ku created a delicious Cantonese mango sago cream.
